Harvesting fresh produce at our Aquaponics Farm

Fairmont Singapore and Swissôtel The Stamford are leading the charge in sustainable practices. Since its launch in March 2020, its innovative Aquaponics Farm has significantly reduced the hotel’s environmental footprint. This impressive system has supplied an estimated 30% of the vegetables and 10% of the fresh fish needs for Fairmont Singapore every month. By 2022, the farm had yielded a remarkable harvest of 2,300kg of vegetables & herbs and 950kg of fish!

Fairmont Singapore and Swissotel The Stamford has been awarded Winner in the Climate Action Category for the Annual HICAP Sustainable Hotel Awards 2020.

Running in its 31st installation, the prestigious annual HICAP Sustainable Hotel Awards are designed to recognise hotels in the Asia Pacific region that are creating innovative new methods, strategies and technologies to face today’s sustainable development challenge, while providing tangible examples of sustainable best practices that can be replicated and adapted across the region. Our Aquaponics Tilapa is one of many dishes prepared and served with fresh ingredients sourced from our Aquaponics Farm. This Christmas, cuddle up for a cause! Get your Wishes Start Here Teddy Bear available for online purchase at SGD50. Every purchase supports Make-A-Wish®, granting life-changing wishes for children facing critical illnesses.

We joined forces with Beyond Social Services to run the “Tree of Hope” program in 2022 and 2023. This heartwarming initiative granted Christmas wishes and festive cheer to 200 children from low-income families.

Our innovative Eco Serve line of waterless and cableless chafing dishes isn’t just good for the environment, it enhances your experience too! This technology reduces carbon emissions by 5,363kg and saves over 199,680 litres of water annually by eliminating the need for electricity and water.

Eco Serve also translates to superior service for you. These dishes maintain consistent temperatures for extended periods, minimizing food waste and ensuring fresh, delicious offerings. Additionally, the cable-free design allows for greater flexibility in the buffet layout, creating a more dynamic and enjoyable dining experience.

Restaurants with buffets feature live cooking stations, where dishes are prepared fresh based on guest preferences, reducing the need for bulk preparation and potential leftovers. Partnering with Treatsure, they also offer a “buffet-in-a-box” option on select days, allowing guests to enjoy delicious meals without contributing to food waste. They utilize Lumitics, an AI-powered food waste tracker, to meticulously analyze what and how much food gets wasted in their kitchens. These insights allow them to optimize production processes, minimize ingredient spoilage, and engineer menus to reduce waste. In addition to Lumitics’ AI tracking, we turn food scraps into a valuable resource. These scraps are composted and used as fertilizer for our Aquaponics Garden, which supplies fresh, homegrown herbs and ingredients for your dining experience.

Taking innovation a step further, we installed a valoriser in 2023. This cutting-edge technology transforms food waste into 80% clean water for safe discharge and a 20% usable substrate. Researchers are currently exploring its potential to be converted into animal feed, maximizing resource recovery and minimizing environmental impact.

In 2015, they launched a pioneering initiative, offering digital access to The Straits Times and International New York Times through an app. This eliminated the need for physical newspapers, resulting in a significant environmental impact.

The benefits are multifaceted. Guest services and housekeeping staff enjoy increased productivity, with an estimated savings of over 6,300 man-hours annually. Additionally, this program reduces hotel waste by an impressive 247 tonnes of paper per year.

Beyond temperature, humidity plays a crucial role. High humidity can create an unpleasant atmosphere, while excessive moisture can even lead to mould growth and air quality issues. Our monitoring system allows for precise control of humidity levels, preventing these discomforts and maintaining a healthier environment for all. This proactive approach not only benefits guest well-being but also contributes to our sustainability efforts. By keeping humidity levels optimal, we reduce the need for energy-intensive air conditioning and ventilation systems.
