In partnership with ARTiSTORY and Museum of Fine Arts, Boston, SKAI introduces “Gathering of The Greats, A Wave from The East”; a bespoke high tea experience inspired by the renowned print series “Thirty-six Views of Mount Fuji”.

SKAI, in collaboration with ARTiSTORY and the Museum of Fine Arts, Boston, unveils the second chapter of a four-part art-inspired afternoon tea series. Titled “Gathering of The Greats, A Wave from The East,” this immersive experience takes guests on a culinary journey through Katsushika Hokusai’s renowned woodblock print series, “Thirty-six Views of Mount Fuji.”

From June 2nd to July 31st, 2023, SKAI invites you to indulge in an unforgettable afternoon tea experience. This high tea promises to tantalize your taste buds with epicurean delights inspired by Hokusai’s art, while captivating your eyes with the restaurant’s unparalleled city views. Offered daily from 3pm to 5pm on Level 70 of Swissôtel The Stamford, this is a must-try for art and food enthusiasts alike.

Following the success of the first edition featuring Van Gogh’s Sunflowers at ANTI:DOTE, William J. Haandrikman, Managing Director at Fairmont Singapore and Swissôtel The Stamford, expresses his enthusiasm for this new collaboration. He highlights SKAI’s breathtaking views and exquisite Japanese-influenced cuisine as the perfect setting for this unique high tea.

Prepare to be wowed by a specially crafted menu designed by Senior Executive Sous Chef Paul Hallett and Executive Pastry Chef Yong Ming Choong. Each exquisite treat boasts delicate Japanese accents and draws inspiration from Hokusai’s prints. SKAI’s commitment to Japanese ingredients, presentation, and techniques elevates the flavors, making each bite an artistic journey.

The savory highlights are largely inspired by Hokusai’s floral prints. Duck is artfully presented to resemble petals and infused with chrysanthemum flavors, reminiscent of “Chrysanthemum and Horsefly.” Celeriac gets a creative makeover: beetroot shards, whole grain mustard, and sourdough bread evoke the majestic Mount Fuji from “Rainstorm beneath the Summit.” For seafood lovers, Chef Paul’s Salmon takes inspiration from the “Blackberry Lily,” with vibrant colors and a touch of citrus. Even desserts are artistic – “Peonies and Butterfly” inspires a tart-based eel morsel with piped hummus, olive oil caviar, and green peas mimicking leaves.

Don’t miss the exquisite dessert selection inspired by Hokusai’s “Thirty-six Views of Mount Fuji”! The “Chocolate Fuji” stuns with its white chocolate shell and mango passion coulis center, a perfect replica of the iconic mountain. Delicate “Vanilla Cloud Mousse” evokes the wispy clouds in Hokusai’s prints, while the “Sudaichi Macaron” highlights the citrusy Sudachi fruit and birds from “Umezawa Manor in Sagami Province.” Chef Ming truly outdoes himself with three additional pastries inspired by “Chrysanthemum and Horsefly”: a Yuzu Crémeux tart with a floral sable and sea salt, a rose grapefruit mascarpone cream puff resembling a chrysanthemum, and a matcha, lemon, and grapefruit “Matcha Sando Sandwich” representing the leaves.

The Umi No Kisu Latte ($10++) is a visual masterpiece – coconut foam as Mount Fuji, ice cubes as boats, and layered colors mimicking waves. Delicate sakura and butterfly pea flower flavors complement the nutty coconut, perfect hot or cold. The Horizon Gaze ($22++/$15++ mocktail) honors those captivated by Hokusai’s work. A blend of passion fruit, citrus, and blue pea flower creates a mesmerizing magenta hue, reminiscent of the breathtaking scene beyond the horizon.
