Seafood on Ice

  • Fresh seasonal oysters, Maine lobster, Sri Lankan crab, scallops, mussels, and clams, served with classic accompaniments of lemon, mignonette, and cocktail sauces.

Japanese Favourites

  • Salmon, tuna, and hamachi sashimi alongside assorted sushi and maki.

Live & Carving Stations

  • Abalone with fish roe beurre blanc, slow-cooked egg with truffle foam, and pan-seared salmon with ruby cream and herb crumbs.
  • At the carving station, savour slow-roasted tomahawk with béarnaise sauce, maple-glazed Swiss bone-in ham, and roasted barramundi with saffron beurre blanc.

Asian & Indian Selections

  • Enjoy hearty local and regional flavours such as Har Lok Prawn, Braised Pork Rib with Black Bean Sauce, and Slow-Cooked Herbal Kampung Chicken.
  • The Indian line features prawn ghee roast, lamb roganjosh, palak paneer, biryani, and freshly baked naan.

International Dishes

  • Rotating dishes include lamb navarin with petit pois, poached halibut with beurre noisette, seafood romesco, and pan-seared duck breast with Grand Marnier jus.

Aquaponics Salad Bar & Farm-to-Table Selection

  • Fresh greens, house-made dressings and charcuterie, featuring herbs and vegetables from our in-house pesticide-free aquaponics farm.

Chocolate Counter

  • A collection of fine chocolate creations ranging from 40% milk to 70% dark, including vegan dark chocolate mousse, hazelnut praline sablé, flourless dark chocolate cake, and our signature Swiss chocolate cake with vanilla sauce.

Fondue & Tasting Corners

  • Taste your way through dark, milk, white, ruby, and blond chocolate, paired with fruits, pralines, and 68% dark chocolate cookies.
